Matcha supreme is the pinnacle of Japanese green teas. Blessed by
mineral-rich soil, and a mild pacific climate, the first flush tea cultivated in
the northern mountainous region in Kagoshima named Kirishima is truly world class. Altitude
as high as 200m and surrounded by volcanic mountains, the tea harvest consists of
naturally fermented mountain soil with less factory-made fertilizers. The tea is
shaded from direct sunlight for about 4 weeks before harvest which increases the
chlorophll and L-thenine contents contributing to a smooth and a rich vibrant
green colour. The fine art of producing matcha iis famously labor intensive – it can take up to one hour to grind 30 grams
of this tea, but the result is incredibly intense, deep umami flavour and mouth melting softness.
